Recipes - Goat

Roasted kid goat:

Ingredients:
1 whole baby kid goat chopped into roasting
pieces
5 bay leaves
10 white peppercorns crushed
300ml of extra virgin olive oil
300ml of white wine
500ml of vegetable stock
300gr of tomato pulp
5 cloves garlic
4 sprigs marjoram
10 pontiac potatoes halved
salt
14 french green beans

Method:
Step 1
In a deep roasting dish add and mix extra
virgin olive oil, white wine,
vegetable stock, tomato pulp, garlic,
peppercorns, marjoram, and halved
potatoes. Season kid goat well and add pieces
to roasting dish. Cover with foil
and cook in oven at 200 C, for 2 hours.

Step 2
After 2 hours remove foil and cook for a
further 30 minutes, or until
tender.

Step 3
Blanche green beans and mix into kid goat.
Serve hot
