Game Birds

Cornfed Squab Pigeon
Squab pigeons are grown in Central Victoria and fed on a diet of corn and selected grains. These succulent, tender birds with a light gamey flavour are considered by gourmets to be the ultimate in poultry.

Quail
Our quail are sourced from country Victorian farms. Raised in premium breeding and growing conditions, these barn raised quail are grain fed and hormone free.

Pheasant, Guniea Fowl and Partridge
These birds are grown on Ian Milburns proerty at Glenloth in clean pollution free region known as the Mallee in North Central Victoria. Pheasant and Guinea Fowl are largely still seasonal in Australia with the first young birds being put into growing sheds in early November. After 4 weeks they are shifted to free range conditions where they can pick at native grasses and wild herbs as well as their usual feed made from fresh whole grains. The birds need the cool nights to put on a layer of fat under the skin giving the meat a succulent moist and slightly gamey flavour. These birds are excellent for roasting, baking or grilling. Serve with a full blooded red wine. Delicious!

Emu
Emu is a lean meat with a slightly herbal flavour. Raised on natural grasses and grains. A good alternative to make traditional dishes more exciting.
